There was 17 different decks behind the table. 13 half decks to cover ace through king and four other decks for spade, diamond, hearts and clovers.
once he knew the card, picked out the 9 half deck and the diamond half deck and put them together.
Maybe even half of that to account for two sides.
That sounds really complicated to do Live and quickly enough that no one would see….
Each of the gray cards (your, card, is the) is a separator. The deck is separated into 4 sections. Depending on what card the audience picks he rotates and or flips each section of the deck.
The middle 4 are always “OF” so he separates them at the start (at 2:52).
There are four suits to choose from so that’s simple, one suit for each edge/side and contained in one of the sections.
The other three sections have the number that would be chosen. There are 13 numbers, but I’m betting that he omitted the ace to make only 12 different cards (ie: If low card was chosen he would have said 2,3,4,5,6,7,8 where available).

I think one half of the card is written on in such a way so that he can organize the cards and it spells out whatever word, just partial letters on each card, and he just has to change the order depending on the card
